Ingredients
- 1 +1 tsp of (olive/canola) oil
- 1 onion, diced
- 1 carrot, shredded (or diced)
- 1 handful of cabbage (about 1/4 head), sliced
- 2 packs of Udon noodles (or type other rice noddle)
- 2 tbsp of soy sauce
Add-on:
- 1 egg
- flax seeds (OR sesame seeds)
- green onion
- ginger, grated
Instructions
1 – Heat 1 teaspoon of oil in a large frying pan over medium heat. When hot, add in the diced onion (and, optionally, the grated ginger) and cook for about 5 minutes or until translucent.
2 – Add in the carrot and cabbage and cook for a minute.
3 – Add in the Udon and cook for one minute over medium heat (if you’re using other type of rice noodle, cook them following the cooking instructions on the package). Add in the soy sauce and cook for another minute.
4- If you like, you can add in an egg and cook for another 2 minutes or until cooked.
Add-on:
You can also sprinkle some flax (or sesame) seeds and some green onions. To make it look pretty, I also sprinkle some raw shredded carrot and sliced cabbage (green and purple).
