This is a great recipe if you have a craving for Asian food. This is a spin-off of a traditional fried rice recipe and should satisfy everyone’s taste buds!
Ingredients
- 1/2 cup of rice (3/4 cup if you’re hungry)
- 1 teaspoon of olive/canola oil
- 1 carrot, diced
- 1 handful of sweet peas (canned or freeze dried)
- 1 onion, diced
- 1 egg, beaten
- 1 tbsp of soy sauce
- 1 stalk of green onion, minced
- Pepper
For the non-vegan version, you can add:
- 1 handful of bacon bits (or 1 slice of ham, diced)
- OR 1 can of shrimps
Serves: 2
Instructions
1- Cook the rice following the instructions on the package (usually, for white rice, it will be 13 min in double the volume of water).
2 – Heat the oil in a frying pan on medium heat. When the pan is hot, add in the onion and cook for 2 minutes or until translucent.
3- Add in the diced carrot and cook for another 5 minutes.
4- Add in the cooked rice and the (cooked if necessary) sweet peas and let fry for 1 minute without moving it.
*Note for non-vegetarian option: Add in the bacon or shrimps along with the rice
5- Add in the beaten egg and soy sauce and stir for about 2 minutes or until the egg is cooked.
6- Serve and, if you feel fancy, you can sprinkle some minced green onion for a green touch!
